Title: Extra Firm Tofu Breakfast Pancakes

Servings 4 | Calories per serving: 410 kcal
Ingredients
454 grams Extra Firm Tofu (drained)
3 cups Rolled Oats
2 teaspoons Baking Powder
1/4 teaspoon Iodized Salt
1 cup Soy Milk
1 tablespoons Maple Syrup
2 teaspoons Vanilla Extract
Toppings
1 cup of berries (+100 kcal)
3/4 cup non-fat plain greek yogurt (+90 kcal)
2 tablespoons (40 grams) of maple syrup (+100 kcal)
Recipe Instructions
Toss all ingredients in a high-speed blender. Add more water as needed.
Heat a pan over medium heat and wipe with grape seed oil (or other high-heat oil). Once hot, pour in pancake mix.
Flip once you see bubbles throughout (same as a typical pancake).
Storage: Keeps in the fridge for 3-4 days. The mixture does thicken significantly overnight. Add water to thin as needed.
