Title: Nancy's Leeky Bean Soup

Servings 4 | Calories per serving 300
Ingredients
4 Garlic Cloves, minced
4 Leeks, chopped
2 cups Vegetable Broth (alt: 2 vegetable bouillon cubes + 2 cups of water)
2 15 oz cans of cooked white beans
1/2 Lemon, just the juice
2 Tablespoons of Extra Virgin Olive Oil (optional, or could be reduced to 1 teaspoon)
Recipe Instructions
Chop and prep the ingredients
Saute the garlic and leeks in olive oil until they reduce. Then add the rest of the ingredients and cook for an additional 3-4 minutes.
Serve warm or cold.
