Title: Pumpkin Spiced Oatmeal

Servings 4 | Calories per serving 500 with toppings
Ingredients
1 cup Steel Cut Oats (dry measure)
1 15 oz can of Pumpkin Puree (not pumpkin pie filling)
2 tablespoons packed Brown Sugar
1 tablespoon ground Cinnamon
1 teaspoon ground Ginger
1/2 teaspoon ground Cardamom
1/2 teaspoon Nutmeg
1/8 teaspoon ground Clove
1 cup unsweetened Almond Milk
1 cup water
+/- a splash of vanilla extract
Toppings
1 medium apple (+kcal)
2 tablespoons of hemp/ground chia seeds/ ground flax seeds (+120 kcal) or 3/4 cup of non-fat plain greek yogurt (+90 kcal)
Recipe Instructions
Combine all of the ingredients with a sauce pan (you'll want one that has a lid) and turn the burner on to medium heat.
Stir to combine and occasionally while cooking. Be careful as the mixture may spit as the air bubble release. Cover while cooking so as not to get burned/splashed.
Cook until the steel cut oats or soft. You may need to add a bit more water depending on the consistency that you prefer.
Add toppings and enjoy
