Umami Sushi Bowl

Servings 4 | Calories per serving 400 - 500

Ingredients

454 grams Extra Firm Tofu (drained)

1 cup Frozen Edamame

1 cup Brown Rice (dry measure)

4 Large Nori Sheets

1 Large Cucumber

4 Carrots

1 Ripe Avocado

1/4 cup Teriyaki Sauce



Recipe Instructions

  1. Make the brown rice ahead of time by combining 1 cup of brown rice with 2 cups of water. I like to use my rice cooker. Stovetop: Combine rice with water. Let sit for 20 minutes to soak. After soaking, bring to a boil. Once boiling, reduce to medium heat and cover. Let cook for 40 minutes. Turn off burner and let sit for 10 minutes with lid on before checking.

  2. Cut the Extra Firm Tofu into squares and bake in the oven on baking paper at 400F for 60 minutes or place in the air fryer on 400F for 15 minutes. Once baked, toss with the teriyaki sauce.

  3. Steam or microwave the edamame. Cut the avocado into 4 slices (1 per meal). Cut the carrots into long thin strips. Slice the cucumber.

  4. Divide all ingredients into 4 portions and serve in a large bowl. Use the Nori to scoop up the rice and vegetables.
