Title:Zucchini Pasta Salad

Servings 4 | Calories per serving 500
Ingredients
180 grams pasta, dry measure
2 zucchini (about 1.5 lbs)
1 teaspoon Extra Virgin Olive Oil
2 tablespoons shallots (1 medium sized shallot), minced
3 garlic cloves, minced
2 tablespoons of capers
1 15 oz can of chickpeas, drined
1/3 cup feta cheese* (50 grams), optional
1/3 cup pistachios, roasted
2 red bell peppers, seeded and diced
1/4 cup fresh parsley, chopped
2 tablespoons fresh dill, chopped
1 lemon, just the juice
Recipe Instructions
Place the water for the pasta on to boil. Cook per package instructions. 1 serving of pasta is about 150 kcal or 45 grams (cook 4 servings).
While pasta is cooking, prep/chop/mince the other ingredients
Sautee the zucchini with garlic, shallot and capers
Combine all ingredients and enjoy warm. Also tasty chilled the following day
*Note: Feta can sometimes be difficult to moderate. Program members find it helpful to divide blocks of Feta into 50 gram servings and to freeze the extra amounts, so that they are already pre-portioned for future recipes.
