Adobo Black Bean Burgers

Title: Adobo Black Bean Burgers

Servings 5 | Calories per serving 200 (per patty)
Ingredients
15 oz can black beans
1/2 frozen corn
65 gram of Chipotle in Adobo (most cans are 7 oz, use 1/3 of a can)
1/4 cup fresh cilantro
1 tablespoon flax seeds mixed with 2 tablespoons water (to form a flax egg)
1 cup bread crumbs
1/2 teaspoon garlic powder
salt and pepper to taste
Recipe Instructions
Put the black beans, corn, chipotle, adobo (including the liquid), and cilantro in a food processor. Pulse a few times until partially pureed (be careful not to turn it to mush; alternately, mash together with a fork).
Transfer to a bowl. Add the 'flax egg', bread crumbs, and garlic powder, and mix together. Season with salt and pepper.
Form into patties using a 1/2 cup measure (it should form 5 patties).
Put on a plate or baking sheet and refrigerate for at least 15 minutes (can be made ahead at least a few hours at this point).
Brown stovetop in the skillet or on the grill.
Plating this recipe: pair with homemade french fries (250 grams of white potato or 200 grams of sweet potato per serving) and 1/2 lb of non-starchy vegetables.
How to make homemade french fries? Cut potato into desired shape, lightly spray with oil (optional) and place in the air fryer on 400F for 15-20 minutes.
