Marinated White Beans

Title: Marinated White Beans

Servings 4 | Calories per serving 375
Ingredients
1 cup farro, dry measure (or intact whole grain or choice)
15 oz can white beans, drained
2 red bell peppers, roasted and then diced
1/4 cup shallot (1 small shallot), minced
2 tablespoons extra virgin olive oil
1 lemon, zested and then squeezed
2 garlic cloves, finely minced
1/4 teaspoon red pepper flakes
1/2 cup fresh parsley, chopped (or fresh herb of choice)
Recipe Instructions
Boil the farro (about 45 minutes) or until tender. Once cooked, drain and set aside to cool.
Roast the red peppers. If we have a gas burner, this can be done by charring them over the open flame. These can also be tossed on the grill or in the oven (use high heat). They are ready when the skins are beginning to blacken/char. Set aside to cool and remove any of the char once cool enough to handle with our hands.
While the farro is cooking: In a large mixing bowl, stir together the remaining ingredients and season with salt or black pepper to taste.
Marinate. Cover the bowl and refrigerate for at least 2 hours or preferably overnight. Stir again before serving or store in a sealed container in the fridge.
What's missing from this dish? Pair this with 1/2 lb non-starchy veggies when plating. Or, chop and combine 2 lbs of non-starchy veggies for fully pre-prepared meals.
