Title: Mashed Potatoes and Green Beans

Servings 4 | Calories per serving 375
Ingredients
1 kilogram (2.2 lbs) of white potato
1/4 cup Extra Virgin Olive Oil (alt: Walnut Oil)
1/4 cup fresh chives (or any fresh herb of choice)
2 lbs of green beans (fresh or frozen)
Recipe Instructions
Bring a large pot of water to a boil.
Toss the green beans into the boiling water for 3-5 minutes, or until deep green. Use a slotted spoon to remove them from the water and place aside to cool.
Add potatoes to the boiling water and cook for 15-20 minutes, or until fork tender.
Drain the potatoes and mash them. Add the olive oil and chives.
